If a creamy, sweet cole slaw is your jam, then you have come to the right place! I consider myself a coleslaw connoisseur (is that a thing?!!) It's my number one side dish anytime we go out to eat. But my first question is always: is it mayo or vinegar based? That creamy mayonnaise is what I love!
However, most coleslaw recipes contain sugar and not enough balance of tang for my liking. This easy recipe with only 7 ingredients will probably have your guests asking for the recipe, which is usually what happens for us! There is one caveat that I can promise you will make all the world of difference ... homemade mayo. If you haven't made your own mayo, then consider this your sign! You can make luscious mayo in under a minute at my blog here. If you just can't make mayo at this time, then make sure you use a mayo that is made with avocado oil like this one
I've been making this recipe for years but I can tell you that everything - I mean everything - changed when I started making my own mayo. I had several family members ask what I changed after tasting the 'new' version because it was that much significantly better!
Creamy Cole Slaw
- 1/4 - 1/2 cup of Mayonnaise (make your own or use this brand: https://amzn.to/3V95Y4G )
- 2 Tablespoons of Apple Cider Vinegar
- 1/4 t Celtic salt
- 1/4 t black pepper
- 1/2 t Poppy Seeds
- 2-3 T of Monkfruit (optional)
- 4 cups of shredded cabbage (or 1 bag pre-shredded)
Mix first 6 ingredients together in a medium bowl then pour over shredded cabbage and mix well. It is best if you allow this to rest in the fridge for 30-60 minutes. Mix right before serving and adjust sweetness or creaminess to your desire.
** I like a little sweetness to my coleslaw, so I sprinkle in a bit of Monkfruit. Leave that out if you don't want yours sweet. Poppy Seeds aren't crucial but I like the flavor it brings and the appearance!
