Life changing, I'm telling you!  For years and years, I shy'd away from making my own mayo because I saw too many videos of failed attempts and I didn't want to waste those ingredients! I only attempted this last year because I was out of my store bought mayo and was in the middle of making Deviled Eggs!  After researching other recipes and learning from 'their' mistakes, I have successfully mastered this fail-proof recipe and whip this up in under a minute!

It is ultra creamy and so much more flavorful than any store bought version.  

Why I love this recipe: 

  • I use the whole egg so skip the part about separating the egg
  • Five simple ingredients that are probably already in your kitchen 
  • Quick – the whole process takes less than 5 minutes
  • Healthier!!  No extra ingredients or harmful chemicals!
Two things that are a must:  The egg must be warm temperature or the mayo will separate and you will be upset! Secondly, your precious olive oil is not what homemade mayo needs.  Too many folks have said that it will go rancid after a week or so.  For a successful and flavorful mayo, you'll need some avocado oil.  

Please don't skip on the mustard - I know it's only 1 teaspoon but it's the magical ingredient! I have made it with regular and Dijon both and we prefer Dijon

I use a teaspoon of ACV but you could also use wine or champagne vinegar or lemon juice.  It adds an incredible flavor and helps to stabilize the mixture.  Farm fresh eggs are best but use what you have.

 Fail-proof Mayo 






Dump everything in a jar (I use a 16 oz wide mouth mason jar) Grab your immersion blender (here's the one I use). Turn it on and keep the blender at the bottom of the jar until you start to see the creamy white mayo appear.  This will only take a few seconds.  Then slowly lift up on the blender till you are near the top.  

Congratulations!  In less than 2 minutes, you have made the world's best homemade mayo!  Now go make those deviled eggs, broccoli salad, cole slaw ... okay, I'm hungry now!
