Honey Apple Pie

Like many of you, I grew up eating homemade apple pies with a dollop of vanilla ice cream!  It was a staple in our home that we had at least twice a month.  Of course, it didn't hurt that we had several transparent apple trees in our backyard! My dad built an apple peeler/slicer (and now you can buy these!) and one year we made and froze 32 apple pies!  What a year that was!

Those pies were loaded with white cane sugar and we never thought a thing about it.  Now that I know better and choose to making healthier choices for my family, I have landed on this apple pie that is sweetened with fresh local honey.  I have been making this for almost 10 years now and get asked to bring it to gatherings often.  With only five ingredients, let's get started!


Honey Apple Pie

Pastry for double crust (store bought or homemade)

6 Organic Granny Smith apples - pealed, sliced and cored  

Organic, grass-fed butter (about 2 T)

6 drops of Young Living’s Lemon Vitality Essential oil 

1-2 teaspoon cinnamon 

1/2 cup honey 

Line pie pan with pastry and prick a few times with a fork.  Peel, slice and core apples.  Combine all ingredients in a bowl and mix well. Pour into pie pan lined with crust and then dot with 4-5 pats of yummy grass fed butter 

Cover with a lattice crust of your choice, crimp the edges and sprinkle with cinnamon. Bake at 450° for 10 minutes. Reduce heat to 350° and bake another 25 to 30 minutes longer or until crust is slightly browned.  Depending on the size of your pie pan, you might want to put a cookie sheet or a piece of tin foil on the bottom tray to catch any drippings that might overflow.

Carefully pull it out of oven and take a picture of your artwork!  Wait for it to cool then slather with some homemade vanilla ice cream and devour!


** Notes:

Sometime granny apples can be very large so I will only use 5 apples

If you do not have the Lemon Vitality oil then use 1 T lemon juice

This is delicious the next day warmed up or eaten cold!
