Coconut Chocolate Bark

Chocolate bark that is actually healthy?  Say no more! Needed to satisfy my sweet tooth so I found this recipe for some chocolate bark and whipped it up!
 
Coconut Chocolate Bark

1/2 cup virgin coconut oil (I use this brand: https://amzn.to/3uSZaO8 )

1/4 cup Cocoa powder (I use this brand: https://amzn.to/3V0VbK7 )

1/4 cup real maple syrup (I use this brand: https://amzn.to/3IlLDSo )

1 T almond or peanut butter (optional) (I use this brand: https://amzn.to/42YWrPC )

About 1/2 cup of chopped nuts 

1/3 cup coconut flakes (I use this brand: https://amzn.to/3uXJadJ )

Pinch of sea salt
 
In a medium sauce pan, melt the coconut oil over low heat. Remove from heat and whisk in the cocoa powder, maple syrup and almond or peanut butter until smooth. Add a pinch of sea salt to taste. Stir in half of the nuts
 
With a spatula, spoon the chocolate mixture onto a parchment-lined baking sheet and smooth out. Sprinkle the remaining nuts and all of the coconut flakes on top. Add a bit more sea salt if desired
 
Please in the freezer for about 15 minutes or until frozen solid. Once frozen, break apart into small pieces. Store in the freezer until ready to eat. It will melt if left out!
 
Probably not an item to make for company since it cannot sit out on the counter. So this is a “mama’s-personal-stash-hide-it-in-the-fridge” chocolate!

**** Since I prefer toasted coconut, I decided to toast my flakes in some butter and then I added it to the mixture instead of sprinkling it on top.
 
If you need it extra sweet then you might want to add more maple syrup
