We started making these when our homeschooled kids were in high school studying nutrition.  They quickly became a favorite and are made often!

Almond Chip Bars
 
16 oz organic creamy almond butter (I use this brand: https://amzn.to/49rBjUJ )
 
1 cup honey or blue agave nectar
 
2 eggs
 
1 tsp vanilla extract
 
1 tsp baking soda
 
½ tsp sea salt (I use this Celtic salt: https://amzn.to/3P4X2tt )
 
1 cup organic carob chips or organic dark chocolate chips (I use this Lakanto brand: https://amzn.to/3TlyoqQ )
 
½ cup chopped pecans (optional)
 
2 drops Young Living’s Cinnamon Bark Vitality Essential Oil (optional)
 
Mix almond butter with a hand blender until creamy. Add sweetener of choice, eggs, vanilla, baking soda, salt, cinnamon bark oil and nuts.  Mix well until all ingredients are thoroughly combined.   Mix half of the chips into the batter.   Pour batter into a well-greased 9 x 13 baking dish.  Top with rest of chips and bake at 325 for 25-30 minutes.  Let sit for 5 minutes before cutting and serving.  Super yummy by itself or top it with some homemade vanilla ice cream made with Monk Fruit!
