Ready for a double feature?? Two recipes in one blog! These little appetizers are my favorite and they are devoured every time I take them to gatherings but they are SO much better when made with homemade tortillas! Want to step it up a notch? Use some dried herbs from your garden ;)
Homemade Tortillas
2-1/2 cups organic flour of choice
1 cup water
3 T butter or olive oil
1/2 t salt
Knead till no longer sticky. Let rest 20-30 minutes. Roll into a flat circle adding flour as needed. Cook on griddle for 1 minute on each side. Careful because your spouse may start eating them right off the griddle!
While those are cooling, let's make the herbed cream cheese mixture
Herbed Pinwheels
8 oz cream cheese, softened
2 T softened butter
2 T minced chives
1-2 T minced fresh parsley
1/2 t garlic powder
1/4 t dill weed
1/8 t dried thyme
Pepper to taste
Cream together butter and cream cheese then add remaining ingredients. Spread on a tortilla, roll up tightly then cut into bite-size rounds.
And now you are the spotlight of every party!
P.S. - this mixture is also very yummy on some crackers!
