These were my kids favorite muffins when we were homeschooling and yet I still make them for events and holidays. So easy and very healthy. This is the original recipe but now I swap out the spices for Young Living's Vitality oils and they are truly busting with flavor!
Applesauce Muffins

2 cups sifted flour of your choice (I mix Spelt and whole wheat)
1 tsp baking soda
1/2 tsp ground nutmeg
1/2 tsp ground cinnamon
1/4 tsp ground cloves
1/4 tsp Himalayan or Celtic salt (I use this brand: https://amzn.to/3wDxP2T )
1/3 cup avocado or coconut oil (I use this brand: https://amzn.to/48CKn7W )
1 cup unsweetened applesauce
3/4 cup local honey
1/4 cup chopped walnut pieces (optional)
Mix all ingredients together in a large bowl and pour into cupcake pan with paper liners. Bake at 350° for 25-30 minutes. Makes 16 muffins
For this batch, I did two drops each of Young Living‘s nutmeg, cinnamon and clove vitality oil instead of the dry spice. They were super yummy!
May your blessings be numerous ~ Rhonda
