Have an abundance of fresh strawberries?  This honey-sweetened strawberry pie will help take care of those for you!  This was actually my first ever strawberry pie that I made.  I found organic strawberries on clearance and bought 6 clamshells.  I made strawberry popsicles, ice cream, fruit smoothies, AND this delicious pie!  The traditional strawberry pie is usually laced with loads of sugar, jello or even high fructose corn syrup.  We can do better than that, folks!  

I scoured the internet, changed up some things and created this recipe.  Hubs has given it an A and so did my neighbors that I shared it with!  You can certainly use frozen berries and make this year round but summer time with fresh berries is the best.  This is a no-bake pie and only has 5 ingredients - doesn't get much easier than this ;)

Scrumptious Strawberry Pie

1 pie crust baked and cooled (store bought or homemade)
6 cups of fresh strawberries
1 freshly squeezed lemon or 1/4 cup lemon juice
3 T plus 2 t water
2 T Arrowroot
1/4 cup (or less) raw honey

Wash and hull the berries.  Set aside 4 cups.  To make a compote, put remaining 2 cups of berries into a saucepan with water and simmer for 8-10 minutes. Slightly crush berries with a potato masher.  Mix Arrowroot and lemon juice in a seperate bowl then add to smashed berries.  Let mixture bubble and thicken for 2-3 minutes while constantly stirring. Remove from heat, add honey and mix well.

Cut remaining 4 cups of strawberries into halves or quarters and pile into cooled pie crust.  Once the smashed berries have cooled, pour evenly over top of the strawberries.  Cover and chill for at least 2 hours. That's it!!  Serve with homemade whipped cream and enjoy!

** Notes:

If you have really ripe, sweet strawberries, then reduce the amount of honey or eliminate it completely

I like to save 1 cup of berries and pile them on top of the compote mixture for a nice presentation

The crust will get soggy so this needs to be eaten within 1-2 days

I make my own whipped cream by whipping 1 cup of heavy cream, 2 tablespoons of maple syrup and 1 teaspoon of vanilla. Whip till peaks are formed
