Amazing Granola

I was on the hunt for a healthier granola recipe that did not include oats but couldn't seem to find one that suited our taste buds.  After combining and tweaking several recipes, we finally landed on this . The taster of the house (that would be my love of 34 years!) has decided that this is the winner!  The maple syrup gives this granola a nice flavor with a great crunch! It's also very flexible so make sure you read my notes at the end.

  Low-Carb, Healthy Granola

Only 5 minutes of prep time! Dump everything in a bowl and mix together:



Spray cookie sheet with Avocado Oil.  Mix all ingredients together in a medium bowl then spread on a baking sheet in a thin layer.  Bake at 350 F for 15-20 minutes.  Do not over bake.  Granola will set up and harden once out of the oven.  I have always went to the 20 minute mark. Do not stir while baking.  Let it cool then grab a wooden spoon or metal spatula to loosen it from the pan.

I love this as a snack but hubs has decided this is now his favorite cereal!


Personal Notes:
* I don't care for raw coconut because it is chewy, so I buy the big flakes toasted (not shredded) or I toast them myself

* I mix the nuts so it's a combination of whatever I have - almonds, cashews, pecans, etc.

* Throw a tablespoon or so of Chia Seeds in for extra nutrition

* I make a separate batch for hubby because he prefers I add about 1/2 cup of Lily's Chocolate chips

* Make sure you use maple syrup not pancake syrup!

* I was out of sunflower seeds one time so I used pumpkin seeds - it's a versatile recipe!

* I sift my almond flour just to make sure there aren't any clumps

*** You can make this a Keto granola by using a Keto approved sweetener
